Co-owner and founder, Veronica Garza, started making the tortillas several years ago after committing to a gluten-free diet to alleviate symptoms of lupus and other autoimmune conditions. The tortillas were a big help in allowing her to continue enjoying meals like Mexican fajitas and breakfast tacos with her family and friends in Laredo, Texas. Siete is owned by Aida, Veronica, and Miguel Garza and operates out of a completely gluten free kitchen in Austin, Texas.
